Pizza, French Bread, Bread Sticks, Italian Sauce

Pizza (Pizza Dough Mix) You will need: parchment paper (not wax paper) 4 egg whites 3 TBS olive oil 1 TBS honey 1 tsp. vinegar 3 TBS sugar 2 tsp. salt 5 tsp. yeast + 2 tsp. sugar + 1 cup very warm water 4 cups of Pizza Dough MixPreheat oven to 540 degrees Pizza Dough: Combine on low speed until it starts to blend (one minute or so). Scraping the sides and bottom of the bowl as it blends, speed up the machine to medium/high setting and let it mix the dough for 6 minutes or until well blended. The dough should be sticky to the touch unlike a wheat-based dough. Lay out parchment paper onto cookie sheet and lightly grease with olive oil. Scoop out the dough onto the parchment paper, using an oiled spatula or oiled fingers, start to spread the dough out evenly and in the desired shape and size. The dough will double in thickness, so make sure that you press it thin enough (I give it a final press down after my topping are on). Spread on the (thick) pizza sauce, cheeses and favorite toppings right away. Let it rise for 10 minutes. Slide the pizza off of the cookie sheet and into the center of the oven and bake for 7-15 minutes. Keep and eye on the bottom of the pizza as to not over-brown. Top should be bubbly with a deep golden browned crust. In a small bowl, combine the yeast, 2 tsp. sugar and very warm water. Set aside until foamy. Combine the egg whites, 3 TBS sugar, olive oil, honey, vinegar and salt in a Kitchen Aid mixing bowl with dough attachment or in a bread machine. Add 4 cups of flour mix to the egg white mixture. Pour the foamy yeast directly over the top of the flour and egg mix-ture.Tips: If you buy a pre-made pizza sauce, you should thicken it up by adding tomato paste and a few more spices. Thicker sauce will assure the best GF pizza possible. Follow my recipe and make your own sauce. It is easy and tastes much better than a prepackaged jar. If you love veggies on your pizza, make sure that you have a thick layer of cheese on the pizza before adding the veggies to avoid a soggy pizza. You can also pre-cook some veggies a little and let them sit on a paper towel for a minute or two, just to eliminate some of the water that releases during cooking.. You can bake at lower temperature if you prefer, but no lower than 375 degrees. Adjust your baking time. There should be enough dough for a medium pizza and bread sticks, or one x-large pizza. |

French Baguettes Prepare a French baguette pan by lining it with parchment paper. Make the pizza dough recipe as written. Using an oiled spoon, fill your baguette pan. Use a warm knife to cut 1/4 inch deep diagonal slits along the top of the dough. Cover with greased plastic wrap and let rise in a very warm place for 45 minutes or until doubled. Bake at 375 degrees for 15 –18 minutes (depending upon thickness). Tip: Let the bread cool for one hour before eating. Although this bread is quite good fresh, it is even better after reheating in the oven (375 for 15 minutes). Pizza Dough Mix ingredients; Tapioca Starches, corn starch, brown rice flour, white rice flour, millet flour, sweet rice flour, sorghum flour, dry milk, xanthan gum, guar gum, ENER-G egg replacer (potato starch, leavening (calcium lactate, calcium carbonate, citric acid), sodi-um, carboxymethylcellulose. Thick and Zesty Fusion Pizza Sauce 1/4 cup minced onion 3-4 minced garlic cloves 1/4 cup minced celery 1 tsp. fennel seed 1 tsp. Oregano 1 tsp. basil 1 bay leaf salt, pepper and sugar red pepper flakes (start with a few and add a bit at a time) 10.75 oz. can tomato paste + 4-5 tbsp. of tomato sauce or puree 1/4 cup real shredded parmesan cheese In a sauce pan Use what you need and refrigerate or freeze the rest for another day. Prep time: 15 minutes .Cooking time: 30 minutes , melt 1 tsp. of butter and 2 tsps. olive oil. Add celery , garlic and onion. Cook on medium heat until the onions become transparent. Lower the heat to med/low. Add tomato paste, sauce and spices. Stir often. Add salt to taste (start with 1/2 tsp. and add as needed) Use only a few pinches of sugar. Add the parmesan cheese last. |

Bread sticks (Pizza Dough Mix) Follow directions exactly as you would for pizza. Once you get your dough pressed to the desired thickness ( the dough will double in thickness), add garlic salt/powder, parmesan or whatever you like. Generously oil a knife or pizza cutter and pre-cut your bread sticks.. Let rise for 10 –15 minutes. Bake at 400 degrees for 10-15 minutes or just until lightly browned. Follow the directions for Thick and Zesty Pizza Sauce for a great dip.Focaccia Bread (Pizza Dough Mix) Follow all instructions for pizza dough. With oiled spatula or hands, thin out the dough to desired thinness. Add a very light coat of olive oil, garlic or whatever you choose. Bake at 450 degrees until golden brown..Flat bread (Pizza Dough Mix) Follow all instructions for pizza, only thin your dough as much as you can. Lightly grease with olive oil. Bake at 420 degrees until golden. Tip: For pizza or flat breads, one of my favorite things to make is a shredded chicken, bacon and provolone pizza or flat bread. It needs no pizza sauce. Just prepare your dough, add shredded chicken, provolone and sprinkle with real bacon pieces.Sandwich wraps (Pizza Dough Mix) Make pizza dough as directed. Cover and refrigerate dough for two hours. Use lightly oiled parchment paper and scoop a small amount of dough in the center. Oil a second piece of parchment paper and place over the top of the dough and roll out to make a thin and even wrap. If it sticks too much, you may add a bit of pizza dough flour to make the dough easier to work with. Heat up a non-stick frying pan to medium heat and carefully put your dough into the pan. Flip it over when the bottom begins to brown. Your cooking will vary depending on thick-ness. Meanwhile, prepare your favorite sandwich meats, cheese, condiments and veggies. Enjoy.Hoagies or Hamburger Buns (Pizza Dough Mix) Make pizza dough as directed. Cover and refrigerate the dough for 3-4 hours. Use a non-stick baking pan. Melt 2 tbsp. of butter (butter will encourage necessary browning). Dip a large spoon into the butter and scoop out the amount of dough needed to make your buns (the dough will double in size). Make sure your buns are shaped the way you want them, but do not flatten down. Cover with greased plastic wrap and let rise in a warm place for 45-60 minutes until doubled in size. Bake at 375 degrees for 13-18 minutes depending on size. Tips: Run a knife through hot melted butter to make superficial criss-cross marks into the dough. If you are making hamburger buns, you can sprinkle with sesame seeds. Do not cut open for at least one hour after baking.. Even while fresh, I love putting mine in the toaster just a minute for a perfectly browned and tasty roll. |
